*S*N*O*W* CREAM

Snow Cream
 
1 large bowl snow
 
1 can sweetened condensed milk
 
1 T. vanilla
 
2 T. sugar
 
Mix together and garnish with maraschino cherries.

[2 ingredient] Pumpkin Spice Muffins

I just had to share this super easy, yet super yummy muffin recipe (Pinterest inspired - of course)!
 

[PUMPKIN SPICE MUFFINS]


1 box spice flavored cake mix + 1 can pumpkin
 
 
That's it!! Just mix together, put in muffin pan or small loaf pans and bake according to pkg. instructions. Cool; sprinkle with powdered sugar.

I got 12 muffins plus a small loaf from the batch I made this morning.

DELISH!!!
 
 

I'm on the lookout for a donut pan.....I know they'll taste the same, but there is just something about a pumpkin spice donut that sounds even better!

Zucchini Bread w/ Cream Cheese Frosting

Zucchini Bread w/ Cream Cheese Frosting
 
3 eggs
2 cups sugar
1 cup oil
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon baking soda
3 cups flour
2 cups grated, unpeeled zucchini
3 teaspoons vanilla

*chopped pecans or walnuts (garnish)
 
 


Beat eggs and sugar, add oil and spices; blend. Add flour (w/baking powder and soda added), vanilla, and zucchini; mix. Scoop into greased muffin tins and/or loaf pans. Bake at 350 degrees for 15 minutes for regular size muffins, 20 minutes (or until pick comes out clean).
 
Cream Cheese Frosting
1 (8 oz.) softened cream cheese
1/2 stick softened butter
1/2 tsp. vanilla
1 (lb.) box 10x sugar
Combine softened cream cheese and butter until smoth and fluffy. Add vanilla and sugar; beat until thick and creamy.
 
Allow to cool; frost with cream cheese frosting and garnish with nuts.
This recipe made 5 large muffins + 1 regular loaf + 1 small loaf.

When in Chincoteague, you MUST have ice cream from Island Creamery!!
 
 
 
 
I had heard good things about the Cake Batter flavor, so a waffle-cone-cake-batter it is!
 
 
 
The one scoop was enough to feed several people
(but I managed to take care of it all myself!) :O)
 
 
There can be quite a line (we were there in August), but trust me, it's definitely worth any wait!!

Pico Taqueria - Chincoteague, VA

 
My family and I had lunch at Pico Taqueria last week. I was excited to try this place, as I had read lots of great reviews.
 
 
 
 
I read a little about the owners before going, so it was kindof cool "meeting" the four of them. What an awesome business they have.
 
 
I got the Chincoteague Classic lettuce, pico de gallo, cotja,
creme fraiche with chicken, the Cilantro Rice Pudding topped with fresh mango, and Daily Drink Special Limeade.
 
 
OMG! This lunch was amazing!!
 
 

Mom and Dad got.....
 
 

a beef, a fish, and a veggie taco and Chips and Salsa (which I sampled).


Julie got a chicken taco and The Chicken City
Blackened chicken, corn and black bean salsa, avacado cream, cotja.



I highly recommend Pico Taqueria!
The food, atmosphere, and service is awesome!!
Can't wait to go back..............

Rustic Blackberry Tart

I picked a few blackberries from my neighbor's vines.........
 
 
and made a simple, rustic, blackberry tart......
 
 
1 pie crust ( I use Pillsbury Pie Crust)
2 cups berries
1/2 cup sugar
3 T. butter
flour (just a sprinkle)
Grease a baking dish with butter. Put crust in dish; add berries and sugar. Dot with butter and sprinkle with flour. Fold over edges, and bake at 400 degrees until crust is browned. Serve hot with a dip of vanilla ice cream.

Banana Split Pie

Banana Split Pie
 
 
1 graham cracker crust
1 small vanilla instant pudding
2 cups cold milk
2 bananas
1 small can crushed pineapple- well drained
1 cup diced strawberries
1/2 cup chopped pecans
whipped topping or whipped cream
chocolate syrup
 
 
 
In graham cracker crust, layer in this order: sliced bananas, crushed pineapple, pudding (mix according to pkg.), strawberries, 1/4 cup nuts, whipped cream. Garnish with more diced strawberries, 1/4 cup nuts, and a little chocolate syrup. I also added blueberries today since this was for our 4th of July picnic. DELISH!!!

Peanut Butter Candy...

This easy 3-ingredient recipe makes the perfect pinwheel candy every time!

 
1 stick softened (room temp.) butter
1 lb. box confectioners sugar (10x sugar)
peanut butter (smooth)
 
 
Put softened butter in a mixing bowl and add sugar. Mix by hand until it forms a dough. Roll out to desired thickness (on counter dusted with more sugar). Spread with peanut butter. Roll lengthwise then put in foil and chill. Slice and serve.
 
Sometimes (for me) it turns out prettier than others.
 
So easy and so yummy!!

I recently had another girl's day out with Wanda and Hope. We had discussed lunch options and had narrowed it down to a couple of options that we really wanted to try in Salisbury, MD. As we were paying for our purchases at Goose on the Roof (which btw, you must visit!), the cashier asked where we were having lunch. She suggested The Farmer's Wife, which was just up the road from their store. We decided to give it a try and absolutely loved it!!
 
Wanda got the Mandarin Orange Salad w/ grilled chicken, pecans, feta, and craisins.
 



I got the Cream of Crab soup (oops! no picture...I gobbled it down too fast!) and a chicken salad sandwich w/seasoned chips.



Hope got the Turkey Apple Panini - Oven Roasted Turkey, Brie Cheese, Apples, and Caramel Sauce on Sunflower Bread.



It was a hit, as was the rest of the food.



So, we had to have dessert.....



Lemon (the better of the two) and Peanut Butter Smith Island Cake!

Peanut Butter Brownie Trifle

 
 
Peanut Butter Brownie Trifle
1 fudge brownie mix (13x9 size)
2 (13 oz.) pkg. miniature Reeses Peanut Butter Cups
4 cups milk
2 (5.1 oz.) vanilla instant pudding
1 cup creamy peanut butter
4 tsp. vanilla
2 (8 oz.) Cool Whip whipped topping (thawed)


1) Prepare and bake brownies according to package directions. Cool and set aside. Cut into small squares.
2) Cut peanut butter cups in half, set aside enough for garnish.
3) In a large bowl, whisk together milk and pudding mix for 2 minutes. Add peanut butter and vanilla. Mix well. Fold in 1-1/2 cartons Cool Whip. (Save remaining 1/2 container for top.)
4) Layer a third of the brownies, then a third of the pudding mixture, then a third of the Reeses, then repeat 2 more times.
5) Top with Cool Whip and garnish with remaining Reeses.
6) Chill.

Lemon Lush Dessert

The perfect summer dessert: Lemon Lush!

My family absolutely loves this and even asks for it instead of cake for their birthday!

You can put this dessert together in no time in just three easy steps.

STEP 1:

For the crust, mix together 1 cup flour, 1 T. sugar, 1 tsp. baking powder, 1/2 cup chopped walnuts or pecans and one stick melted butter. Press into a 13x9 pan and bake at 350 degrees for 10 minutes or until brown. Let cool.


STEP 2

For the next layer, mix together 8 oz. softened cream cheese, 1 cup confectioner's sugar (10x), and 1 cup whipped topping (Cool-Whip). Spread on top of cooled crust.


STEP 3

Next, mix together 1 large *lemon instant pudding and 3 cups cold milk. Spread over cream cheese layer. And finally, spread with remaining whipped topping. Chill and cut into squares.

*While other flavors of pudding (like chocolate) can be used, lemon is, in our opinion, THE BEST!!

Bread Pudding


 
Bread Pudding
 
 
Ingredients:
 
10 slices bread
1 cup sugar
1 cup evaporated milk
1-1/2 cups milk
4 eggs
1T. vanilla
dash of salt
nutmeg
4-5 T. butter
 
 
Whipped Cream
Beat one container (2 cups) heavy whipping cream with 1/2 cup sugar (add 1 T. at a time). Add 1 t. vanilla. Beat until light and fluffy. Refrigerate.
 
 
Grease an 8x8 baking dish with butter. Break bread into small pieces and put into baking dish. In a mixer bowl, mix together sugar, milk, eggs, and vanilla. Pour over bread. Sprinkle with nutmeg and top with pats of butter. Bake at 350 degrees for 45 minutes. When serving, drizzle with caramel sauce and top with whipped cream.
